    The beef heart is the winner. From strictly an artistic POV, the color, composition, balance, all works for me.
    The Som Tam needs more visual interest, like maybe a wider shot…something.
    The lemon sorbet needs a shot of color – like a red spoon or napkin to break the monochrome. The thyme is a start, but it is overwhelmed. Also, they could bounce a little reflected light from the bottom left to soften that shadow. It’s pretty harsh, almost chiaroscuro.
    Bottom line, I’d eat any or all three.
