Ingredients for taco sauce: 4 finely diced roma tomatoes, 1/4 cup water, 3 large cloves garlic- chopped, 1 tbsp cumin seeds, 3 thai birds eye chili peppers, 1 bay leaf, 1 tbsp oil, salt to taste
heat oil in a pan, add garlic, cumin seeds, bay leaf and peppers. toss around for a couple of minutes then add tomatoes, water and cook till tomatoes turn mushy. add salt. remove bay leaf and puree the rest in a blender.
Ingredients for shrimp filling: 10 raw shrimp (shelled, tail removed, deveined), 1/2 cup chopped cilantro… i used stems and all, 2 tsp red chili pepper flakes, 1 tbsp oil, salt to taste
heat oil in a pan, add pepper flakes, salt, cilantro and shrimp. toss everything around and cook shrimp until they turn color and are done…but don’t overcook.
i drizzled the shrimp with taco sauce and served them in corn tortillas. these are great with a side of rice and beans.
